Baileys mud cake
Compatibile with Thermomix TM5 and TM31
Ingredients
- For the cake
- 7 oz milk chocolate
- 5 oz unsalted butter
- 4 oz sugar
- 4 oz brown sugar
- 2 oz cocoa powder
- 6 oz Baileys Irish Cream
- 3 eggs
- 6 oz plain flour
- 2 tsp baking powder
- For the ganache
- 7 oz dark chocolate
- 4 oz heavy cream
- 4 oz Baileys Irish Cream
- 1 oz unsalted butter
Steps
For the cake
- Put the chocolate into the bowl: 5 sec. speed 8.
- Scrape down the sides of the bowl and add butter, sugar, cocoa, and Baileys: 2 min. 120°F speed 5.
- Allow to rest and cool for 15 minutes then add eggs: 5 sec. speed 5.
- Add flour and baking powder: 20 sec. speed 4.
- Check the mixture into the bowl, it must be smooth and completely combined.
- Pour mixture into the cake tin (greased) then bake in the preheated oven at 320°F for 45 minutes.
- Remove from oven and let it rest for 10 minutes before removing and set aside.
For the ganache
- Put the chocolate into the bowl: 5 sec. speed 8.
- Scrape down the sides of the bowl and add cream, Baileys and butter: 2 min. 120°F speed 5.
- Transfer the bowl in the fridge to rest for 1 hour and, every 15 minutes, stir a little to keep it smoother.
- Cut the cake in the middle and pour a soft layer of chocolate cream.
- Put back the half cake and spread the remaining chocolate ganache all over the top.
- Put into the fridge for at least 1 hours before cutting and serve.
