Chicken chorizo jambalaya

Ingredients

  • 2 cloves garlic
  • 1 onion
  • 1 tbsp olive oil
  • 4 oz chorizo
  • 14 oz tomatoes
  • 9 oz basmati rice
  • 10 oz breast (diced) chicken
  • 1 oz vegetable stock concentrate
  • 14 oz water
  • 1 tbsp cajun spice
  • 1 tbsp lime juice
  • to taste parsley

Steps

  1. Put into the bowl garlic (peeled), onion and oil: 3 sec. speed 5.
  2. Scrape down the sides of the bowl and add chorizo (sliced): 5 min. temp. 250°F speed 1 reverse.
  3. Add tomatoes, rice, chicken, stock, hot water, cajun spice and lime juice: 20 min. 210°F speed 1 reverse.
  4. Add chopped parsley, mix with spatula and continue to cook: 4 min. 210°F speed 1 reverse.
  5. Check if rice is cooked properly (continue 2 more minutes if needed).
  6. Transfet into a serving bowl, sprinkle with extra parsley and serve.
