Ingredients

  • 9 oz heavy cream
  • 4 yolks eggs
  • 4 oz sugar
  • 1 tsp (extract) vanilla
  • 1 tsp cinnamon
  • 9 oz milk
  • 3 oz whisky

Steps

  1. Place the butterfly into the bowl and add heavy cream: 1 min. speed 3.
  2. Set aside.
  3. Remove butterfly and add yolks and sugar: 5 min. speed 4.
  4. Add vanilla extract and cinnamon: 5 min. 160°F speed 4.
  5. Scrape down the sides of the bowl and add milk and whisky: 3 min. 160°F speed 4.
  6. Let to rest and cool down and add heavy cream: 10 sec. speed 3.
  7. Transfer in the fridge to rest for 30 minutes.
