Sweet potato carrot and ginger soup
Compatibile with Thermomix TM5 and TM31
Ingredients
- 1 (large) onion
- to taste grated ginger
- a pinch thyme
- a pinch parsley
- 2 tbsp butter
- 10 oz sweet potato
- 4 oz potatoes
- 4 oz carrot
- a few small mushroom
- 18 oz coconut water
- 1 tbsp vegetable stock concentrate
- 1 oz coconut cream
- to taste pepper
- a pinch pink salt
Steps
- Place onion, ginger and herbs into mixing bowl and chop: 3 sec. speed 5 or 6.
- Scrape down sides of mixing bowl with spatula.
- Add butter: 3 min. 250°F speed 1.
- Add sweet potato, potato, carrot and mushroom: 15 sec. speed 7.
- Scrape down sides of mixing bowl with spatula.
- Add water, stock paste concentrate and cook: 20 min. 210°F speed 1.
- Add coconut cream(optional) and blend: 1 min. gradually from speed 4 to speed 9.
- Add ground pepper and salt to taste and garnish with herbs and some left over cream and serve hot with some croutons or toast.
